    Wedding Series 2 Last month we discussed the first few things to do when planning your wedding, such as pulling together your guest list and finding a venue. Today, I want to talk about two of my favourite parts: the theme and the stationary!

    While finding a wedding theme might seem daunting (it will dominate much of your wedding after all), it actually doesn’t have to be scary at all. I was very worried at the beginning, thinking that I had to have a specific and original theme that spoke volumes about my relationship with my fiancé, that was based on the perfect colour combination and that would have everyone talking for years to come. In actual fact, none of that matters. What matters is that you end up with a day designed in a way that makes you happy, feels comfortable and doesn’t make your hair fall out with stress.

    Vegan Recipe | Blueberry Crumble Coffee Cake

    Spring is definitely on its way – finally!  Alex and I took full advantage of the sunshine and milder temperatures this morning and took our pup, Gizmo, on yet another six mile walk. Two days in a row for the little guy, he must think that he’s won the doggie lottery.

    Walking is inspiring. We planned out a lot of this month’s goals for Veganosity, and then talked about Alex’s college graduation in May. Life certainly moves at a quicker pace these days. It seems like the family moved her into her freshman dorm yesterday.

    Once the serious stuff was out of the way we reminisced about her childhood, and out of those memories she suddenly began craving the berry coffee cake that her dad used to make on Sunday mornings. We were at about the five mile point, and I was getting really hungry, so of course I told her to call home and ask her pops to get crackin’ on that cake. And, like the sweet man that he is, he happily obliged.

    IMG_0001 It’s finally strawberry season!  Well, at least it is here in my neck of the woods in Texas.  It’s always exciting when strawberries are in season because they mark the end of winter and the return of all the glorious spring and summer produce.  I find myself pining for them during the final weeks of winter every year.  It’s always a nice surprise once I see these little red orbs pop up at the farmers market.

    I tend to enjoy strawberries in their simplest form, i.e. completely raw.  But, I figured I would come up with my own version of the quintessential strawberry shortcake and share it here with you.  To get a little more of that juicy strawberry flavor, I macerated the strawberries in  raw sugar and a bit of mint for a fresh contrast in flavor.  The shortcake itself is a simple and humble gluten free biscuit that uses only two (!) types of flour.  And, since a strawberry shortcake needs a whipped topping, there’s a good dollop of coconut cream in there for good measure.

    Gluten-Free + Vegan Recipe | Kale Korma

    kalekorma1 There are many types of kormas, but this one is inspired by a North Indian Korma, where a meat (like lamb or chicken) would generally be marinated in yogurt and spices for hours. Needless to say, I’m taking a lot of liberties here, and this creamy, deliciously-spiced version features kale, cauliflower, and carrots. Feel free to swap veggies, adjust the spices, and generally get really creative with this dish. The basics (onions cooked in garlic and ginger, then mixed with cashew cream and tomatoes and Indian spices) will make whatever you choose to include delicious. I like to pair this with an Indian-spiced basmati. Your house will smell so incredible you’ll hardly be able to wait for the korma to finish.

    Cruelty-Free Beauty | A Vegan Makeup Chain Reaction

    aloe-cream-titns In one hand I hold my makeup brush and apply a little Marble Aloe Cream Tint as eyeliner to my lash line with practiced precision. In my other hand I hold my sweet little one-year-old! My other two kiddos wrestle around my feet as I wrestle to brighten up my eyes and disguise those dark circles that linger there.  I can’t  help it!  I want to appear as though I had more than 4 hours of sleep.

    I don’t desire to trick people that I come across in my day. The fact is, I may not even leave the house, but if someone did send a compliment my way it will cause me to stand a little taller. Or better yet, my heart would  melt beyond recognition if my four-year old or two year old said, “Mom, you look beautiful!”  If I can catch that glimpse of myself in the mirror or in the reflection of a window and I appear as though I have it all together then I begin to get it together!  A sort of  “self-fulfilling prophecy.”

    VHbeingvegan Being vegan is more than just a “food” choice- its a healing process that will benefit you and the planet in more ways than one.

    Awakening to the horrors of animal slaughter and slavery is only the first step. If you’re vegan already, you know the emotions and conflicts that can go through your head when you realize what has been going on for so long. The way that human beings can be compassionate towards one species of animal (dogs or cats) and completely disregard the thoughts and feelings of another species (chickens or pigs), while justifying it is baffling and heart breaking.

    However, seeing behind the curtain is a necessary first step for real education and empowerment- and that is where healing begins. Learning that, perhaps supporting the killing of other living things isn’t quick and “humane” like we were told all this time. That these creatures feel pain and love, sadness and joy, just like us.
