Hello! It’s Court from Kind Mom again! Happy 4th! This month I’m sharing my absolute FAVORITE homemade dessert! It’s a super indulgent, but easy to make, chocolate chip cheesecake. This cheesecake is always a hit at parties, and my friends & family request it often. I made this one for my Birthday so I added a bit of festive red sprinkles.
Classic Chocolate Chip Cheesecake
Ingredients:
for the crust
- 1 Tbsp Earth Balance Butter, Melted
- 20 Chocolate Cookies, Crushed
for the filling
- 4 8oz Cream Cheese, Soften
- 1 Cup Sugar
- 1 Tsp Vanilla
- 4 EnerG “eggs”
- 1 Cup Chocolate Chips
Instructions:
for the crust
- Preheat oven to 300
- Crush or process cookies to fine crumbs
- Mix in melted butter
- Press into the bottom of your pie pan
- Bake for 10 minutes
- Set out to cool
for the filling
- Preheat oven to 300
- Blend cream cheese, sugar, and vanilla
- Add “eggs” and mix on low
- Stir in chocolate chips
- Bake for 1 hour 20 min, take it out before it starts to brown
- Cool for 4 hours+
- Serve cold and enjoy!
