Hello! It’s Eleni from Convey The Moment again! I am so happy to be featuring one of my absolute favourite (not to mention easiest) deserts from Oh She Glows. You guys are definitely going to want to give it a try. Not only is it simple it is actually really healthy for you.
The food part in being vegan is a lot of fun for me. I have been vegan for sometime now and my initial reason being my beliefs around animals and their right to life. As I began to learn more and more it was interesting to see just how healthy the vegan lifestyle really is. So you are asking why I share this with you? I have decided to add a branch off of Convey The Moment (my fashion and beauty section) and dedicate some time to Convey The Food where you can find a number of meals and health tips on being vegan or even just living healthier for those of you who are not 100% plant based. I want to inspire others to see just how delicious eating vegan really is and whats the harm in helping a few animals along the way?
Now back to the recipe, you can even eat this for breakfast if you want since it is loaded with fibre, omega 3 fatty acids and the nutrients you need to get your day started. Enjoy! Can’t wait to have more food posts coming your way!

Ingredients:
- 3 Tbls (45 ml) of Chia Seeds (black or white)
- 1/2 (2 ml) Pure Vanilla Extract
- 1 1/2 – 3 Tsps (7-15 ml) Agave Nectar or Maple Syrup
- 1 Cup (250 ml) Almond Milk or Another Diary Free Milk
For Layering:
- Nuts
- Fresh Fruit
- Granola
Instructions:
I suggest soaking the Chia seeds in the almond milk over night for at least 8 hours with the agave (or syrup) and vanilla. It allows them to develop perfectly. The next day all you do is layer it or serve it how you want with your fresh fruits, nuts and granola if you choose!
Another thing I have found is that if you are using sweetened almond milk or another sweetened dairy free milk you do not need to add as much sweetener as the recipe calls for. Enjoy and cannot wait to be back! xx Eleni
