On this months issue of “I Can Vegan That”, I veganized a popular Valentine’s Day Rice Krispies Treats recipe from Pinterest. This was a fun one to do with my 3 year old, Oliver. He was able to measure and pour the cereal, stamp the hearts in the treats, and sprinkle the sugar. I was nervous about the white chocolate since I’d never tried to make chocolate before but I was pleasantly surprised.

Ingredients:
Crispy Treats
- 1⁄2 cup – cashew nut butter
- 1⁄2 cup – brown rice syrup
- 3 tbsp – organic sugar
- 1⁄2 tsp – vanilla extract
- 1⁄4 tsp - xanthan gum
- pinch of sea salt
- 4 cups – natural rice crisp cereal
- 2 tsp – Maggie’s Naturals pink food dye
- Maggie’s Naturals red sugar sprinkles
White Chocolate
- 1/2 cup – raw cocoa butter
- 2 tsp – vanilla powder
- 2/3 cup – confectioner’s sugar
- 1 tsp – lucuma powder
- pinch of sea salt
Instructions:
Line an 8×12-in pan with parchment paper. In a large saucepan on low-medium heat, combine cashew butter, syrup, sugar, salt, xanthan gum, and vanilla. Stir continually as mixture heats for about 1 minute (reduce heat if mixture starts bubbling). Remove from heat and stir in cereal. Mix in the natural red food color to give your treats a cool speckled look. Transfer mixture to pan and press in evenly (use an edge of parchment paper to press without sticking). Refrigerate to cool completely, then cut with heart cutter.
To make the white chocolate mix the sugar, vanilla powder, lacuma, and salt together in medium bowl. Melt the cacao butter dutch oven style, ensuring no water gets in the cacao. Stir continuously as the cacao butter melts and remove from heat immediately after melted and add to the mixture. Stir the chocolate until smooth, then immediately dip your heart treats. Before the chocolate melts, sprinkle the treats with Maggie’s Naturals sugar. Cool and enjoy!
