Vegan Pesto Panko Encrusted Tofu

As a vegan, I constantly hear how much people hate tofu due to a bad experience. Truth be told (in my opinion), the stuff is terrible on it’s own! However, most carnivores don’t eat chicken right out of the package, so we can’t expect to do the same with tofu.

Since I’m at the final stretch of pregnancy, I’m all about simple meals and this is one of the easiest things I’ve made recently. The ingredients are minimal and it doesn’t even require too much clean up! Head over to Studio M to check out my new discovery of vegan pesto panko encrusted tofu!
