  • Vegan Pizza Bites & Music Monday

    Pizza is always a good choice. However, I’m obsessed with miniature things. So tiny pizzas are even better. At our very first charity event back in November, we catered to over 100 people, so of course vegan pizza bites were a must! These little bad boys are so simple & cheap to make & kids love them too!

    Directions:

    Pre-heat oven to 350 degrees or according to phillo box.

    1. Place all of your mini phillo cups on a baking sheet or in a pan
    2. Pour pizza sauce into the cups (to make it simple, pour the sauce into a zip-lock bag & snip off one of the corners then squeeze sauce into each cup)
    3. Top with Daiya cheese
    4. Add pepperoni & toppings of choice
    5. Bake according to the box (10-15 minutes) or until cheese is melted & your shells start to tan a bit

    Enjoy with friends!

    This whole process should take under a half hour, so it’s perfect for moms on the run or a last minute party appetizer.

    PS: Of course I couldn’t forget about Music Monday! This was one of my 1st “songs” with John. When he was on tour & we were apart, I’d listen to it & get all giddy! Since he’s been out of town for the past few days, I figured it was a good choice.
