  • Vegan Recipe | Crispy Siracha “Chicken” Quesadilla

    Vegan-Quesadilla I haven’t had a chicken quesadilla in over 5 years and I have to say, I kind of miss them. I’ve just been hard pressed to find a good grilled chicken substitute and it’s pretty difficult to find vegan meats that aren’t predominantly gluten sourced (my stomach and the stuff don’t get along) so I just haven’t really bothered trying. Until recently…

    You’ve probably already heard of them, but there is this company out called Beyond Meat that our local grocery store just started stocking. Their “chicken” strips are the bomb! Vegan, organic, gluten free, non GMO and absolutely amazing. Quesadillas are now a reoccurring favorite in these parts!

    I’m not gluten-free and love homemade seitan, so I took this recipe and replaced the faux chicken with ground mexican-spice seitan… VERY good! I also replaced the Daiya with Go Veggie! Mexican shreds (our store doesn’t carry Daiya, and just FYI not all the Go Veggie! products are vegan, so check the label!), and I used good ole Texas flour tortillas. Thanks for posting this recipe!
